Les deux objectifs de cette étude s articulent sur un plan fondamental et un plan valorisation. Du point de vue fondamental, il a été mis en évidence des relations étroites entre environnement, biologie et contenu biochimique. Après caractérisation de cette biomasse, un protocole de purification a été mis au point et a permis l obtention d un pigment concentré en R-PE et partiellement purifié. Cette étude a permis de caractériser ce pigment et de mettre en évidence deux formes de R-PE. Des études de stabilité ont été réalisées à partir d extraits bruts. La R-PE est stable pour une gamme de pH allant de 4 à 10, jusqu à 40°C lorsqu elle est en solution et placée à l obscurité. Pour la préservation de la structure du pigment, l ajout de protectants est à proscrire. Pour les conditions de stockage du pigment, il est préférable de le stocker à -20°C pour une application en tant que colorant. Dans un objectif d étude du pigment, il est préférable de le stocker à 4°C mais il faudra nécessairement ajouter des conservateurs pour le maintenir stable dans le temps. L acide ascorbique semble être un conservateur efficace. Ces résultats ont permis de caractériser la RPE et de mettre en avant les interactions entre environnement, matériel biologique et contenu biochimique, mais également de souligner l intérêt d utiliser l espèce Grateloupia turuturu comme source de pigment naturel rouge applicable dans les domaines de la cosmétique et de l alimentaire. | ||
330 | |a The proliferative red seaweed Grateloupia turuturu from the Atlantic coast is a recoverable biomass available through a photosynthetic pigment, R-phycoerythrin. This study has two objectives focused on a fundamental level and development level. From a fundamental point of view, this study has highlighted the close relationship between the environment, biology and biochemical content. After biomass characterization, a purification protocol has been developed and allowed to obtain a concentrated partially purified R-PE. In addition to the characterization of this pigment, two forms of R-PE have been described. Stability studies were carried out using crude extracts. R-PE is stable to a pH ranging from 4 to 10, up to 40°C and when stored in the dark. To preserve the structure, for an application as colorant, it is suitable to store the pigment at -20°C. In an analytical point of view, it is preferable to store the R-PE at 4°C but it will be necessary to add preservatives to maintain a stable pigment over time. In this context, ascorbic acid appears to be an effective preservative. These results were used to characterize the R-PE pigment and highlighted the interactions between the environment, biological material and biochemical content, but also to emphasize the benefits of using the proliferative specie Grateloupia turuturu as a natural red pigment source, applicable in the fields of cosmetics and food. | ||
